Recently FoodyDirect.com, an online gourmet food and gifts website, contacted me to do an interview as part of their Expert series of web-based business entrepreneurs operating in the online gourmet food and kitchenware space.

FoodyDirect bills itself as the "online marketplace bringing the most delicious food in the country right to the doorstep of your home or office."

In a nutshell, they connect peer critiqued gourmet food creators with Foody connoisseurs across the country, enabling their customers to order delectable treats right to their home or office.

In addition, here's a little something I prepared for the folks over at FoodyDirect. My grandmother Jane Covey's Summertime Ice Cream Sandwich. I had the pleasure of eating this simple yet delicious ice cream sandwich every summer when visiting my grandparents in Lunenburg, Nova Scotia. It was my favorite summertime snack.

Jane Covey's Ice Cream Sandwich

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 2/3 cup all purpose flour
  • 1/3 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • Mint chocolate chip ice cream softened slightly

Directions:

In large mixing bowl beat shortening, sugar, egg & vanilla until well blended. In separate bowl combine flour, cocoa, baking soda & salt. Add flour mix, alternating with milk to sugar mix, beating until well blended. Cover and let chill 1 hour.

Create your cookie by placing a heaping tablespoon of dough on ungreased cookie sheet. Flatten each cookie to 2 3/4" circle, 1/4" thick.

Bake at 375 degrees F for 8 - 10 minutes. Let cool 1 minute. Remove from cookie sheet and let cool completely. Fill with softened mint chocolate chip ice cream or ice cream of your choosing. Wrap in aluminium foil and freeze.
